Ingredients
  

  • 2 lbs chicken thighs or chicken breast
  • 2 –3 chipotle peppers in adobo sauce
  • 2 tbsp adobo sauce
  • 3 garlic cloves
  • Juice of 2 limes
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp onion powder
  • Salt and black pepper

Equipment

  • Frying pan, grill, oven, or air fryer
  • Knife and cutting board

Method
 

  1. Make marinade: Blend chipotle peppers, garlic, lime juice, oil, and spices until smooth.
  2. Marinate chicken: Coat chicken well and refrigerate for at least 1 hour (best overnight).
  3. Cook chicken: Grill, pan-fry, bake, or air fry until fully cooked (internal temp 165°F / 74°C).
  4. Rest meat: Let it sit for 5 minutes before cutting.
  5. Serve: Slice and use in bowls, tacos, or salads.

Notes

  • Chicken thighs give the best juicy texture, but breast also works.
  • The longer you marinate, the stronger the flavor.
  • Adjust spice by adding more or fewer chipotle peppers.
