Ingredients
  

  • 1.5 kg fresh mussels cleaned
  • 3 tablespoons olive oil
  • 5 garlic cloves finely chopped
  • 1 onion finely chopped
  • 1 –2 fresh red chillies sliced
  • 400 g crushed tomatoes
  • 150 ml dry white wine optional
  • Fresh parsley chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Method
 

  1. Clean the mussels under cold running water and remove any broken shells and beards.
  2. Heat olive oil in a large pan. Add garlic, onion, and chilli. Cook for 2 minutes until fragrant.
  3. Add crushed tomatoes and white wine. Simmer for 10 minutes until the sauce develops flavour.
  4. Add the cleaned mussels and cover the pan with a lid. Cook for 5–8 minutes until the shells open.
  5. Discard any mussels that remain closed after cooking.
  6. Add fresh parsley and lemon juice. Serve immediately with crusty bread, pasta, or rice.
