Method
- Clean the mussels under cold running water and remove any broken shells and beards.
- Heat olive oil in a large pan. Add garlic, onion, and chilli. Cook for 2 minutes until fragrant.
- Add crushed tomatoes and white wine. Simmer for 10 minutes until the sauce develops flavour.
- Add the cleaned mussels and cover the pan with a lid. Cook for 5–8 minutes until the shells open.
- Discard any mussels that remain closed after cooking.
- Add fresh parsley and lemon juice. Serve immediately with crusty bread, pasta, or rice.
