Ingredients

  • 4-5 Russet potatoes
  • Vegetable oil for frying
  • Salt to taste
  • Black pepper to taste
  • Paprika optional
  • Garlic powder optional
  • Onion powder optional
  • Cayenne pepper optional

Equipment

  • Waffle fry cutter (for the signature shape)
  • Large pot or deep fryer (for frying)
  • Thermometer (to monitor oil temperature)
  • Paper towels (to drain excess oil)
  • Large bowl (for seasoning)

Method

  1. Prepare the Potatoes: Wash and peel the potatoes, if desired. Cut them into waffle-shaped fries using a waffle fry cutter, or slice them into criss-cross shapes with a knife.

  2. Soak the Fries: Soak the fries in cold water for at least 30 minutes to remove excess starch, helping them become crispier when fried.
  3. Heat the Oil: Heat vegetable oil in a large pot or deep fryer to 375°F (190°C) using a thermometer. Ensure the oil is hot enough for frying.
  4. Fry the Fries: Carefully add the fries in small batches to the hot oil. Fry for about 3-4 minutes until golden and crispy. For extra crispiness, double fry by frying once at a lower temperature, cooling, then frying again at a higher temperature.
  5. Season the Fries: Remove the fries and drain them on paper towels. Season immediately with salt, pepper, and optional spices like paprika, garlic powder, onion powder, or cayenne pepper.
  6. Serve: Serve the fries hot with your favorite dipping sauces, such as honey mustard or barbecue sauce.

Notes

  • Double Frying: For extra crispy fries, double fry them by first cooking at a lower temperature (325°F), then frying again at a higher temperature (375°F).
  • Oil Choices: You can also use peanut oil or canola oil for frying.
  • Storage: Store leftovers in an airtight container for up to two days. Reheat in the oven or air fryer for the best results.
  • Seasoning Variations: Customize the seasoning to your liking by adding herbs or grated cheese for added flavor.
