Prepare the zucchini: Grate zucchini and gently squeeze out excess moisture using a clean towel.
Add wet ingredients: In your bread machine pan, add eggs, oil, sugar, and vanilla.
Add dry ingredients: Add flour, baking soda, baking powder, salt, and cinnamon.
Add zucchini and nuts: Finally, add grated zucchini and nuts on top (do not stir).
Set the machine: Choose the Quick Bread or Cake setting (do not use the yeast bread cycle).
Bake: When finished, check doneness with a toothpick. If needed, bake an additional 10 minutes in the oven at 325°F (165°C).
Cool: Let cool for 10–15 minutes before slicing.
