Bread Machine Zucchini Bread Recipe

Ingredients
  

  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • 1 cup granulated sugar or ¾ cup for less sweet
  • 1 tsp vanilla extract
  • cups grated zucchini squeezed to remove excess moisture
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • tsp ground cinnamon
  • ½ cup chopped walnuts or pecans optional

Method
 

  1. Prepare the zucchini: Grate zucchini and gently squeeze out excess moisture using a clean towel.
  2. Add wet ingredients: In your bread machine pan, add eggs, oil, sugar, and vanilla.
  3. Add dry ingredients: Add flour, baking soda, baking powder, salt, and cinnamon.
  4. Add zucchini and nuts: Finally, add grated zucchini and nuts on top (do not stir).
  5. Set the machine: Choose the Quick Bread or Cake setting (do not use the yeast bread cycle).
  6. Bake: When finished, check doneness with a toothpick. If needed, bake an additional 10 minutes in the oven at 325°F (165°C).
  7. Cool: Let cool for 10–15 minutes before slicing.

Notes

  • You can use half whole wheat flour for a heartier texture.
  • Add chocolate chips for a sweeter version.
  • Store in an airtight container at room temperature for up to 3 days, or freeze for longer freshness.
