  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 cup grated zucchini excess moisture squeezed out
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or chocolate chips

Equipment

  • Bread machine with "Quick Bread" or "Cake" setting
  • Grater (for zucchini)
  • Measuring cups and spoons
  • Large bowl for draining zucchini (optional)

Method

  1. Prepare the Zucchini: Grate the zucchini and squeeze out excess moisture using a paper towel or cloth. Set aside.
  2. Load the Bread Machine: Add the wet ingredients first: eggs, oil, and vanilla extract. Follow with the dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Add Zucchini: Sprinkle the grated zucchini on top of the other ingredients in the bread machine.
  4. Set the Bread Machine: Select the "Quick Bread" or "Cake" setting on your bread machine. This setting is perfect for non-yeast recipes like zucchini bread.
  5. Bake: Start the machine and let it mix, knead, and bake your zucchini bread. Once done, remove the loaf from the machine.
  6. Cool and Serve: Let the zucchini bread cool for a few minutes before slicing and serving.

Notes

  • Moisture Control: Make sure to squeeze out as much moisture as possible from the grated zucchini to avoid a soggy loaf.
  • Storage: Store the bread in an airtight container at room temperature for up to 3 days or freeze slices for later.
  • Customizations: Add-ins like walnuts, chocolate chips, or raisins can be mixed in during the bread machine’s kneading cycle for extra flavor and texture.
  • Doneness: Always check the loaf near the end of the baking cycle by inserting a toothpick. If it comes out clean, the bread is done.
