Warm the milk with cinnamon, cloves, and nutmeg until gently simmering. Remove from the heat, stir in the honey, and cool.
Blend the cooled milk mixture with eggs, brown sugar, vanilla, salt, and oil until smooth.
Sift the cocoa, baking powder, baking soda, and flour into a bowl.
Gradually whisk the liquid mixture into the dry ingredients until just combined. Do not overmix.
Fill greased molds about halfway with batter.
Bake at 350°F (175°C) for 15–20 minutes, or until the centers are set and a toothpick comes out with a few moist crumbs.
Cool completely, then slice each cake horizontally.
Spread dulce de leche between the cake layers and gently sandwich them together.
Melt the chocolate and dip each filled cake until completely coated.
Place on parchment paper and allow the chocolate to set before serving.
