  • cups raw unsalted pistachios shelled
  • 1 cup unsweetened oat milk or almond milk
  • ½ cup full-fat coconut cream
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract optional
  • 1 pinch sea salt
  • Optional Garnishes
  • Chopped pistachios
  • Fresh raspberries or strawberries
  • Toasted coconut flakes
  • Vegan white chocolate shavings
  • Crushed dried rose petals
  • Fresh mint leaves

Method
 

  1. Soak the pistachios in hot water for 30 minutes, then drain and rinse well.

  2. Add the pistachios, oat milk, coconut cream, maple syrup, vanilla extract, almond extract (if using), and sea salt to a high-speed blender.
  3. Blend for 2–4 minutes until completely smooth and creamy, stopping occasionally to scrape down the sides.
  4. Taste the mixture and adjust the sweetness by adding more maple syrup if desired.
  5. For an ultra-smooth texture, strain the cream through a fine-mesh sieve (optional).
  6. Divide the pistachio cream evenly among serving glasses or dessert bowls.
  7. Refrigerate for at least 2 hours until chilled and slightly thickened.
  8. Garnish with chopped pistachios, fresh berries, toasted coconut, vegan white chocolate, or mint before serving.
  9. Serve chilled and enjoy.
