Ingredients

  • Ingredient Quantity Notes
  • Ground beef 1 lb 450g Lean beef works best for less grease.
  • Corn tortillas 8-10 small Flour tortillas can also be used.
  • Taco seasoning 1 packet or homemade For added flavor.
  • Shredded cheese 1 cup Cheddar or Mexican blend preferred.
  • Oil spray 1-2 tablespoons For spraying on the taquitos.
  • Salsa optional 1/4 cup For dipping or drizzling.

Equipment

  • Air fryer
  • Skillet or Pan for cooking the beef
  • Tongs or a spatula for flipping taquitos
  • Toothpicks (optional for securing the rolls)
  • Spray bottle for oil (optional)

Method

  1. Cook the Beef: In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat and stir in taco seasoning, adding a bit of water if needed to create a flavorful mixture. Let it simmer for a few minutes to combine the flavors.
  2. Prepare the Tortillas: Heat the tortillas in the microwave for 20-30 seconds to soften them, making it easier to roll without cracking. Use a damp paper towel if needed.
  3. Assemble the Taquitos: Place a small spoonful of the cooked beef mixture in the center of each tortilla. Sprinkle with shredded cheese, and roll tightly into a cylinder shape. If needed, secure the taquitos with a toothpick.
  4. Preheat the Air Fryer: Preheat the air fryer to 375°F (190°C) for about 3 minutes to ensure even cooking.
  5. Air Fry the Taquitos: Lightly spray the rolled taquitos with oil. Place them in the air fryer basket, making sure not to overcrowd them. Cook for 8-10 minutes, flipping halfway through for even crisping.
  6. Serve: Once golden brown and crispy, remove from the air fryer. Serve with salsa, sour cream, or guacamole for dipping.

Notes

  • Storage: Leftover taquitos can be stored in an airtight container in the refrigerator for 2-3 days. Reheat them in the air fryer for a few minutes to regain their crispiness.
  • Freezing: You can freeze the assembled taquitos before cooking. Lay them out on a baking sheet to freeze individually, then transfer to a freezer-safe bag. Cook from frozen in the air fryer for an extra 3-4 minutes.
  • Customizations: Feel free to swap out the beef for ground chicken, turkey, or beans for a vegetarian version. You can also add diced onions, peppers, or jalapeños to the beef mixture for additional flavor.
  • Crispiness Tip: Make sure to spray a light coat of oil on the taquitos before cooking to help them crisp up nicely in the air fryer.
