Ingredients

  • 1 ½ cups ricotta cheese low-fat or part-skim
  • 1 large egg
  • 1 cup spinach fresh or frozen
  • ½ cup cooked lean ground turkey or chicken optional for added protein
  • ½ cup shredded zucchini optional
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil spray for greasing the baking dish
  • Optional: You can add additional vegetables like bell peppers or mushrooms for extra nutrients and flavor.

Equipment

  • Oven
  • Mixing bowls
  • Baking dish (8x8 or similar)
  • Spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board (if adding vegetables)

Method

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Spray your baking dish with olive oil spray to prevent sticking.
  2. Prepare the vegetables: If using fresh spinach, sauté it lightly in a non-stick pan until wilted. If using frozen spinach, thaw and drain excess water. If adding zucchini, shred it and squeeze out excess moisture.
  3. Mix the ingredients: In a large bowl, combine ricotta cheese, egg, cooked spinach, lean ground turkey or chicken, shredded zucchini (if using), Parmesan cheese, garlic powder, dried basil, salt, and pepper. Stir everything until well combined.
  4. Transfer to the baking dish: Spoon the ricotta mixture into the prepared baking dish and spread it evenly.
  5. Bake: Place the baking dish in the oven and bake for 25-30 minutes or until the top is golden and the dish is set.
  6. Serve: Once done, remove from the oven and let it cool for a few minutes before slicing into portions. Serve warm.

Notes

  • Customizations: Feel free to add your favorite vegetables, such as mushrooms, bell peppers, or onions, for added flavor and nutrition. You can also add herbs like oregano or thyme to give it a different flavor profile.
  • Freezing: This recipe is great for meal prep! You can freeze individual portions for up to 3 months. To reheat, simply microwave or bake in the oven until heated through.
  • Protein Boost: Add more lean protein like grilled chicken, turkey breast, or tofu for a more filling option, especially if you’re aiming to increase protein intake.
  • Serving Suggestions: Pair with a light side salad or roasted vegetables to create a well-rounded meal.
