  • cup honey
  • 2 large eggs
  • ¼ cup melted unsalted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon optional
  • ¼ teaspoon salt
  • Optional: ½ cup chopped walnuts or chocolate chips

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the bananas in a large bowl.
  3. Whisk in the honey, eggs, melted butter, and vanilla.
  4. In another bowl, combine the flour, baking soda, baking powder, cinnamon, and salt.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Stir in walnuts or chocolate chips, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
