Ingredients

  • 12 fresh talaba oysters or oysters of your choice
  • 1/4 cup unsalted butter melted
  • 2 cloves garlic minced
  • 1/2 cup breadcrumbs preferably panko for extra crunch
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese optional for extra meltiness
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • A pinch of chili flakes optional for heat
  • 1/4 cup white wine optional, for a bit of added flavor

Equipment

  • Oyster knife (for shucking the oysters)
  • Baking sheet
  • Parchment paper or aluminum foil (optional)
  • Small mixing bowl
  • Spoon or small spatula (for adding the topping)
  • Oven

Method

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Shuck the Oysters: Using an oyster knife, carefully open the oysters, removing the meat from the top shell but keeping it in the bottom half. Discard any broken shells and arrange the oysters on a baking sheet lined with parchment paper or aluminum foil for easier cleanup.
  3. Prepare the Garlic Butter: In a small bowl, combine the melted butter with minced garlic, lemon juice, salt, pepper, and a pinch of chili flakes (if using). Stir well to combine.
  4. Make the Topping: In a separate bowl, mix the breadcrumbs, Parmesan cheese, mozzarella cheese (if using), and chopped parsley. Pour the garlic butter mixture into the breadcrumb mixture and stir to create a moist, crumbly topping.
  5. Top the Oysters: Spoon a generous amount of the breadcrumb mixture onto each oyster, pressing it down gently to ensure the oysters are well-covered.
  6. Bake the Oysters: Place the oysters in the preheated oven and bake for 10-15 minutes, or until the cheese is melted, the breadcrumbs are golden brown, and the oysters are just cooked through.
  7. Serve and Enjoy: Remove the oysters from the oven and allow them to cool for a minute. Serve immediately with lemon wedges and garnish with additional fresh parsley.

Notes

  • Fresh Oysters: The key to a great baked talaba is using fresh, high-quality oysters. Make sure they are tightly closed before shucking, and discard any that are already open.
  • Flavor Variations: You can experiment with different cheeses like Gruyère, Gouda, or a bit of blue cheese for a more intense flavor. Adding bacon or pancetta can also provide a nice smoky twist.
  • Serving Suggestions: Baked talaba pairs wonderfully with a crisp white wine like Chardonnay or Sauvignon Blanc. A light side salad or roasted vegetables can complement the richness of the oysters.
  • Storage: Baked talaba is best enjoyed immediately, but if you have leftovers, store them in an airtight container in the refrigerator for up to 1-2 days. Reheat in the oven before serving
