  • 1/4 cup seeds like chia, flax, or sunflower
  • 1/4 cup honey or maple syrup
  • 1/4 cup nut butter such as almond or peanut butter
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup dried fruit optional
  • 2 tablespoons chocolate chips optional

Method
 

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine the oats, chopped nuts, seeds, and salt.
  3. In a separate bowl, mix the honey or maple syrup, nut butter, and vanilla extract until smooth and well combined.
  4. Pour the wet ingredients over the dry ingredients and stir until fully combined. If using dried fruit or chocolate chips, fold them in now.
  5. Scoop the mixture into small bite-sized portions using a spoon or ice cream scoop, and place them on the prepared baking sheet.
  6. Bake for 10-12 minutes, or until golden brown around the edges.
  7. Let the bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
