Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 cup milk
  • 1 1/2 cups diced apples peeled and cored
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract optional
  • 1 teaspoon ground cinnamon optional, for extra flavor

Equipment

  • Muffin tin (12-cup)
  • Muffin liners or non-stick spray
  • Mixing bowls (one large for dry ingredients, one for wet ingredients)
  • Whisk
  • Spoon or ice cream scoop (for portioning the batter)
  • Cooling rack
  • Oven

Method

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. Mix wet ingredients: In another bowl, whisk together eggs, melted butter, milk, and vanilla extract.
  4. Combine wet and dry: Add the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Fold in apples and raisins: Gently fold in diced apples and raisins until evenly distributed throughout the batter.

Notes

  • Apple variety: Use firm apples like Granny Smith or Fuji for the best texture and flavor.
  • Spices: If you like a bit of warmth, add 1 teaspoon of ground cinnamon or nutmeg to the dry ingredients.
  • Add-ins: You can also add nuts like walnuts or pecans for extra crunch.
  • Storage: Store muffins at room temperature for up to 3 days in an airtight container, or freeze for up to 3 months.
  • Vegan option: To make this recipe vegan, substitute the butter with coconut oil and use a flax egg instead of the regular eggs.
