Ingredients

  • 4 large apples Granny Smith or other tart varieties are ideal
  • 1 pound egg noodles kosher-certified
  • 4 large eggs
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup vegetable oil or melted margarine
  • 1 tsp vanilla extract optional
  • 1/4 cup raisins or walnuts optional
  • 1/4 cup brown sugar for topping, optional

Equipment

  • Large mixing bowl
  • 9x13-inch baking dish (or equivalent)
  • Large pot for boiling noodles
  • Knife and cutting board
  • Measuring cups and spoons
  • Wooden spoon or spatula for mixing
  • Aluminum foil or parchment paper (for covering, optional)

Method

  1. Preheat the oven to 350°F (175°C). Grease your 9x13-inch baking dish with oil or cooking spray.
  2. Boil the noodles: In a large pot, cook the egg noodles according to the package instructions. Once cooked, drain the noodles and set them aside to cool.
  3. Prepare the apples: Peel and core the apples. Slice them thinly or chop them into small pieces, depending on your preference.
  4. Mix the ingredients: In a large mixing bowl, combine the eggs, sugar, cinnamon, salt, and vanilla extract (if using). Whisk until the mixture is smooth. Add the vegetable oil (or melted margarine) and mix well.
  5. Combine apples and noodles: Add the cooked noodles and sliced apples into the bowl with the egg mixture. Stir gently to combine until all the noodles and apples are coated with the mixture.
  6. Transfer to baking dish: Pour the apple and noodle mixture into the prepared baking dish. Spread it evenly. If you like, sprinkle the top with raisins, walnuts, or a bit of brown sugar for added texture and sweetness.
  7. Bake: Place the dish in the preheated oven and bake for about 45 minutes, or until the top is golden brown and slightly crispy.
  8. Serve: Allow the apple kugel to cool for a few minutes before serving. It can be served warm or at room temperature.

Notes

  • Kosher Ingredients: Always use kosher-certified ingredients, including the noodles and eggs, to ensure the recipe follows Jewish dietary laws.
  • Customize the sweetness: You can adjust the amount of sugar depending on how sweet you like your kugel. Add more cinnamon or nutmeg for extra flavor if desired.
  • Make it dairy-free: To make the dish dairy-free, use margarine instead of butter, and ensure the other ingredients are kosher parve.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4-5 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes.
  • Freezing: Apple kugel can be frozen before baking. Prepare the dish and cover it tightly with plastic wrap and foil. When ready to bake, remove from the freezer and bake at 350°F (175°C) for about 60-70 minutes.
