- Preheat oven to 350°F (175°C). Grease or line a 9x9-inch baking pan.
- In a bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
- Combine wet and dry ingredients. Mix gently until just combined.
- Fold in chopped apples and nuts (if using).
- Pour batter into prepared pan and spread evenly.
- Bake for 40–50 minutes or until a toothpick comes out clean.
- For glaze: melt butter, add brown sugar, milk, and vanilla. Stir until smooth.
- Pour glaze over warm cake. Let it soak in before serving.
Notes
- Use firm apples like Granny Smith or Honeycrisp for best texture.
- Do not overmix the batter to keep the cake soft and fluffy.
- Add nutmeg or cloves for extra warm spice flavor.
- The cake tastes even better the next day as flavors deepen.
- Store in an airtight container at room temperature (2 days) or refrigerated (up to 5 days).
- Freezes well for up to 2 months when wrapped properly.
