Ingredients

  • 1 cup almond butter smooth
  • 1 cup sugar or coconut sugar for a healthier option
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup coconut oil or butter melted
  • 1/4 cup milk dairy or plant-based

Equipment

  • 9-inch round cake pan
  • Mixing bowls
  • Electric mixer or whisk
  • Measuring cups and spoons
  • Spatula
  • Cooling rack

Method

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal.
  2. In a large mixing bowl, beat together the almond butter, sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the almond flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing well.
  4. Stir in the melted coconut oil and milk until fully combined. The batter will be thick.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.
  8. Serve as is or top with a dusting of powdered sugar or your favorite frosting.

Notes

  • You can substitute almond flour with a gluten-free flour blend, but almond flour gives this cake its unique flavor and texture.
  • If you want to make it extra indulgent, top the cake with sliced almonds or a drizzle of chocolate ganache.
  • This cake can be stored at room temperature for 2-3 days or in the fridge for up to a week.
  • To make it dairy-free, be sure to use a plant-based milk and non-dairy butter or coconut oil.
