Ingredients

  • ½ cup vinegar apple cider or white vinegar
  • ¼ cup fruit juice orange, apple, or pineapple
  • ¼ cup soy sauce
  • 2 tablespoons olive oil or vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon brown sugar or honey optional for extra sweetness
  • 1 teaspoon black pepper
  • ½ teaspoon paprika or chili flakes optional for spice
  • 1 tablespoon Worcestershire sauce optional for added depth
  • 1 tablespoon fresh herbs optional for a fragrant twist, such as thyme or rosemary

Equipment

  • Bowl or mixing container
  • Whisk or spoon for stirring
  • Measuring spoons and cups
  • Grill, stove, or oven (depending on your cooking method)
  • Basting brush (optional, for glazing)
  • Ziplock bags or container for marinating

Method

  1. Combine Ingredients: In a bowl or mixing container, whisk together vinegar, fruit juice, soy sauce, olive oil, minced garlic, brown sugar (if using), black pepper, and paprika (if using). Stir until the sugar is dissolved and the ingredients are well-combined.
  2. Adjust Flavor: Taste the marinade and adjust the seasoning to your liking. Add more sugar for sweetness, more vinegar for tanginess, or more soy sauce for saltiness. If you like a bit of spice, add chili flakes or a dash of hot sauce.
  3. Marinate: Place your protein (chicken, steak, pork, tofu, etc.) or vegetables in a ziplock bag or shallow dish and pour the marinade over the top. Ensure the ingredients are well-coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 12 hours for more flavor).
  4. Cook: Once marinated, cook your ingredients on the grill, in the oven, or on the stovetop, depending on your preference. For grilling, brush the marinade over the food while it’s cooking for added flavor and moisture.
  5. Serve: Once cooked, serve immediately and enjoy the delicious, flavorful results!

Notes

  • Storage: Any leftover marinade can be stored in an airtight container in the fridge for up to a week. It can also be used as a dipping sauce or glaze.
  • Adjusting for Heat: If you like spicier marinades, feel free to add extra chili flakes, cayenne pepper, or even a dash of hot sauce to the mix.
  • Alternative Sweeteners: You can replace brown sugar with honey, maple syrup, or agave nectar for different sweetness levels.
  • Vegetarian/Plant-Based Options: Allegro marinade works wonderfully with tofu, tempeh, or grilled vegetables for plant-based meals.
  • Overnight Marinating: For the best flavor, let your ingredients marinate overnight, especially for thicker cuts of meat.
