Peel and Wash the Arbi: Peel the Arbi and wash it thoroughly to remove any dirt.
Boil the Arbi: Boil the Arbi in a pot of water for about 10-12 minutes until tender but firm. Drain the water and let it cool slightly.
Cut the Arbi: Once cooled, cut the Arbi into bite-sized cubes or rounds.
Spice the Arbi: In a bowl, mix the turmeric, chili powder, garam masala, cumin powder, amchur, and salt. Add the Arbi pieces to the bowl and toss well to coat with the spices.
Oil the Arbi: Drizzle the oil over the spiced Arbi and toss again to ensure an even coating.
Preheat the Air Fryer: Set your air fryer to 180°C (350°F) and preheat for 3 minutes.
Air Fry the Arbi: Place the spiced Arbi pieces in the air fryer basket in a single layer. Air fry for 18-20 minutes, shaking the basket halfway through for even crispiness.
Serve: Once golden and crispy, remove the Arbi from the air fryer. Garnish with fresh coriander and serve with mint chutney or tamarind chutney.
